Roast Beef with Horseradish

Serves – 6 people

Ingredients

750g beef tenderloin
70g breadcrumbs, made using day-old bread
1 tbsp horseradish cream
1 tbsp olive oil
3 garlic cloves, crushed
50g butter
3 tsp fresh thyme leaves

Method

Preheat your oven to 200⁰C/180⁰C fan oven, and prepare a baking tray by lining it with baking paper. Place a frying pan over a high heat and heat the oil. Add the beef to the pan and turn regularly for 6-8 minutes until the meat is sealed and browned all over. Remove the beef from the pan, place on your lined baking tray, and set aside.

Reduce the frying pan heat to medium, and add the garlic, thyme, and butter. Stir the mixture continuously while cooking for 1-2 minutes. Once the butter has melted and is aromatic, remove the pan from the heat and add the breadcrumbs. Season the mixture generously and stir well to ensure it is evenly combined.

Spread the horseradish cream over the top of the beef using a flat-bladed knife. Once it is coated, sprinkle the cream with the breadcrumb mixture, pressing it in as you work across the surface of the meat. Bake the beef in your preheated oven for 20-25 minutes. When ready, the beef crust should be golden, with the meat cooked according to your preference.

Cover the beef loosely with foil, set aside, and let it rest for 10 minutes. Serve with your favourite green vegetables.
