Balsamic Pork with Apples

The flavour combination of pork and apples has been popular for generations. This classic recipe is quick, easy, and sure to become a household favourite. Our factory shop can supply just the right cut of pork for this recipe.

Preparation time – 10 minutes
Cooking time – 15 minutes
Serves – 4 people

Ingredients

  • 4 pork medallions, or 4 pork loins steaks, with the fat removed
  • 1 tsp vegetable oil
  • 2 small onions, peeled and sliced into 8 wedges
  • 2 red eating apples, cored and sliced into thin wedges
  • 15g unsalted butter
  • 2 tsp runny honey
  • 2 tsp of thyme, either freshly chopped or dried
  • 100ml balsamic vinegar

Method

  1. Combine the honey, vinegar and thyme in a shallow dish, and season the mixture to taste. Place the pork in the dish and turn it until it is evenly coated. Cover the dish and set it aside to marinate.
  2. In a large, non-stick frying pan, heat the oil and butter and add the onions wedges. Cook them for 2-3 minutes, while stirring occasionally. Add the thin apple wedges to the pan and cook them for a further 2 minutes. When the onions and apples begin to caramelise, remove them from the pan.
  3. Remove the pork from the marinade and set the liquid aside. Add the pork to the frying pan and cook for 4-5 minutes over a medium heat. Turn the steaks in the pan, add the onions, the apples, and the marinade liquid, and cook them together for another 4-5 minutes. The steaks are ready when their juices run clear.
  4. Serve the steaks with the sauce, apples and onions from the pan, along with seasonal vegetables.
